2、蔬菜可提供的维生素主要叶酸、胡萝卜素还有B族维生素等。这当中维生素C、胡萝卜素、叶酸在黄、红、绿等深色叶菜中含量非常高。

3、绿叶蔬菜的矿物质含量很丰富;但某些蔬菜(苋菜、菠菜、通心菜等)中的草酸会影响人体对矿物质的吸收,故烹调这些蔬菜时,应先用开水漂烫,以去除草酸。专家建议,成人每日宜摄入500克蔬菜,这当中2/3为叶菜,1/3为瓜果和根茎类。
